Set the oven to 350°F and let it preheat. Line an 8x8-inch baking pan with parchment paper and coat it with non-stick cooking spray.
Using a hand mixer, blend 1 cup of granulated sugar with 4 tablespoons of unsalted butter at room temperature until creamy.
Add in 1 egg and 1 teaspoon of vanilla, mixing until smooth.
In a separate large bowl, combine 1 cup of all-purpose flour, 1/2 teaspoon of salt, 1/2 teaspoon of ground cinnamon, 1/4 teaspoon of ground nutmeg, and 1 teaspoon of baking soda.
Peel, core, and chop the apples. Add 3 cups of them to the flour mixture, tossing until the apples are evenly coated.
Combine all the wet and dry ingredients together, stirring until just combined.
Spread the batter evenly into the prepared pan and bake for 35-40 minutes, rotating the pan occasionally to ensure the pudding bakes evenly.
Let it cool down to a warm temperature.
